Many people feel terrible after eating too much bread or pasta (myself included). When you go to the doctor they will often refer you to get a blood test to rule out Coeliac disease. When the results come back negative people are often told that gluten is not a problem because their test was negative.
Now there is a thing called Non Coeliac Gluten Sensitivity. There is not a whole lot of science backing it but I’d like to point out that It’s not all on your head. There is a reason people are removing gluten and it’s because SOME people FEEL BETTER when they remove it!

Some people are sensitive to gluten. Often people who think they are sensitive to gluten are actually reacting to wheat and some are OK with wheat but only if it is organic.

Once I find out what I am sensitive to, what do I do?
By removing inflammatory foods for a period of time we can concentrate on healing the gut and then reintroducing the foods one by one to gauge your level of tolerance. For most – this is a really valuable lesson in listening to your body. Many will be able to reintroduce foods or just eat in moderation. (This is NOT true for Coeliac Disease – Coeliac disease is a lifelong gluten elimination.)
Having a varied, nutrient dense diet is very important for overall health so this is the ultimate aim when exploring what suits your body .
Coeliac Disease is a serious lifelong Auto Immune condition that requires a strict gluten free diet and affects approximately 1% of Australians. It can be tested for via a blood test, however a biopsy gives a definitive result.
Non-Coeliac Gluten Sensitivity (NCGS)
There is not a lot of evidence about NCGS but there are scientific studies happening all around the world right now to try and understand Non-Coeliac Gluten Sensitivity. NCGS is not always a lifelong sensitivity.
We are not eating the same wheat that our great grandparents were eating! There are all sorts of chemicals sprayed on our wheat and that is on top or all of the processing, bleaching before it ends up in the food in front of us. Many people that suspect they are Coeliac actually have a wheat sensitivity. (Please see your GP to rule out Coeliac if you are suspicious)
